Ingredients

  • Swiss Chard

  • Garlic Olive Oil

  • Sea Salt

  • Water

Instructions

  • First, you want to start by washing the leaves individually.

  • Remove the stems at the bottom of the leaves and slice them up.

  • Roll the leaves into a cigar shape and slice horizontally into one-inch wide strips.

  • Heat olive oil one tablespoon into a pan.

  • Add the minced garlic and cook for a minute.

  • Add the stems and a little bit of water and saute for 1-2 minutes before adding the remaining leaves.

  • Add the Swiss chard leaves. Cook and stir for 4 to 5 minutes or until all the leaves have wilted down. Then, sprinkle a little sea salt on top for a savory touch before serving. If you’re storing away for later, this will keep in the fridge for 3 to 4 days in an airtight container.

Instructions

  • Cook the pasta according to the package directions. Drain and set aside. (If using frozen soy beans then add them to the pasta water 5 to 10 minutes before pasta is done, and remove 1 cup of them with a slotted spoon before draining. They float to the top.)

  • Put 1 cup of the soybeans with the ricotta and basil in a large bowl and lightly mash together with a fork.

  • Add the pasta and remaining soy beans and toss to fully coat.

  • Season with salt and pepper and serve with grated Parmesan.
